From the Farm! July 29, 2020

Summer has finally arrived in the PNW! We are camping in our backyard, learning to swing in our swimsuits, and enjoying the bounty of summer. One of my favorite summertime dishes is calabacitas! It incorporates corn, various varieties of yellow squash and zucchini, tomato, onion, and New Mexico green chile. We love to eat this in the summer when we can get all of the ingredients fresh out of the garden. I added cheese because I was trying to lure my children into trying it, and it worked! Here is a simple recipe I have adapted from the NM Tourism website:


4 T lard

2lbs mixed summer squash (I use yellow crooked neck and any zucchini) – slice thin

1 onion – chopped

2 tomatoes – chopped

2 cups corn (frozen is ok)

1/4 c roasted NM green chile, more if you like spicy foods!


Monterey Jack or Cheddar (optional)


Heat the lard in a cast iron pan. Salt the lard well. Sautee the squash, onion, and tomatoes in hot lard, until all the vegetables are tender. Stir in the corn, chile, and salt to taste. Cook covered for another 10 minutes or so – until the squash and tomatoes have cooked down. Sprinkle cheese over the top! This makes a great burrito filling, is amazing on nachos, or just as a side. Eat along with some pinto beans and a tortilla and you’ve got a great meal!
